With spring in full swing what better way to enjoy the outdoors than harvesting your own fresh asparagus and making a delicious meal with it. Use this recipe for grilled asparagus with either fresh harvested or store bought asparagus.
Ingredients:
1 pound asparagus, trimmed
¼ cup slivered almonds, toasted if desired
¼ cup peanut oil
2 tablespoons apple cider vinegar
2 tablespoons low sodium soy sauce
1 teaspoon lemon juice
1 teaspoon honey
1 teaspoon fresh ginger, finely shredded
1 large garlic clove, minced
½ teaspoon jalapeno, minced
Directions:
Preheat grill to medium heat. Set rinsed and trimmed asparagus spears and almonds aside. Combine all other ingredients in large bowl and whisk well. Add asparagus to bowl and gently toss until spears are coated in sauce. Prepare to cook the spears by removing them from sauce mixture and allowing excess liquid to drip back into bowl. Place asparagus spears on grill; spears can be grilled on top of foil or placed directly onto the grill perpendicular to grates. Cook asparagus by turning every couple of minutes, total cook time should be around 12 minutes depending on your texture preference. Fully cooked asparagus will lose rigidity and become more floppy when held by the stem end. While spears are grilling, reduce sauce by heating over medium heat for about 5 minutes, whisking continuously. Pour reduced sauce lightly over grilled asparagus and top with almonds. Serve with your favorite lean protein and whole grain.
